Genesis is not the only source that talks about Adam’s life. What about the book of Kifala written by Saint Moses. I am the member of the Eritrean Orthodox Church and in our church we have a book named Kifala which is written by Saint Moses. We don't believe that Saint Moses wrote only five books but actually six. The sixth one talks more about Adam and Eve than Genesis.

The Holy Book of Genesis is the only Holy Scripture that talks about the life of our father Adam and the creation of all life on earth. There are no others. Some holy fathers wrote commentaries about different books and epistles in the Holy Bible, but the Holy Book of Genesis is the main and only original source. The Coptic Orthodox Church observes the canonized Scripture, which includes the Torah, which are the five books written by the archprophet Moses. We do not believe there is a sixth.
