During the period between Good Friday and the Resurrection, in the Divine Liturgy, why is the creed prayed omitting "…He rose from the dead on the third day, etc"? Also, "He ascended into heaven and sits at the right hand of the Father" is omitted during the time between the resurrection and the ascension…" Should not the creed be said completely, since it is a declaration of faith?

You are right the Creed is recited as a declaration of faith. Therefore we always recite it complete except on Matins and the Liturgy of the Covenant Thursday and Bright Saturday. The reason for this exception is that we commemorate the actual passions of our Lord moment by moment at that time. It is not right to omit any part of the creed at any other time.
